There are no recap-movie detours and no parallel continuities to reconcile, so for the core series you simply watch Season 1, then Season 2, and the events land in the same sequence they were written. That is why the primary order we list is the watch order, which here doubles as release order, chronological order, and story order all at once.
The one wrinkle worth knowing is that Season 1 aired in two separate cours during 2021. The first cour ran in the winter season and the second cour returned that fall after a gap, totaling 23 episodes. Some streaming platforms split these into "Part 1" and "Part 2," which can make newcomers think there is more to find. There is not: both cours together form a single complete Season 1. Watch them back to back, then continue into Season 2, which aired across 2023 into 2024 (25 episodes).
There is one genuine side entry. The OVA Eris the Goblin Slayer, released in March 2022, is a concurrent side-story that follows Eris during the events around episode 16 of Season 1, while Rudeus is occupied elsewhere.
