Why this order?

The simplest answer is the best one: read Frank Herbert's six Dune novels in publication order. Herbert wrote them as a continuous saga across two decades, each book deliberately building on the last, so the order he published them in is also the order he meant you to read them. Start with Dune (1965) and finish with Chapterhouse: Dune (1985). There is no clever alternate sequence that improves the experience here.

That said, the series shifts gears as it goes. Dune, Dune Messiah, and Children of Dune form a tight first arc around Paul Atreides and his children. Then God Emperor of Dune jumps thousands of years ahead and changes tone dramatically, which is where some readers pause. Heretics of Dune and Chapterhouse: Dune form a final two-book arc that Herbert left unfinished at his death. Knowing those natural breakpoints helps, but the reading order itself never changes.

The big gotcha is the expanded universe. After Frank Herbert died, his son Brian Herbert and author Kevin J. Anderson wrote many additional Dune books, including the Prelude to Dune prequels and the Legends of Dune series, plus two novels that finish Herbert's cliffhanger. These are a separate, optional track. They are not part of the original six and many fans recommend saving them until after you have read Herbert's core novels, if at all.
